Good Times Diner is a student run soup kitchen that serves nutritious and hot free meals twice a week, to support less fortunate members of the Kingston community. The food is prepared by Queen’s University student volunteers who are interested in expanding their understanding of community issues, particularly poverty, in a fun hands-on learning environment.
We think sometimes that poverty is only being hungry, naked and homeless. The poverty of being unwanted, unloved and uncared for is the greatest poverty.

The Pork Loin Recipe from Thursday’s Meal
So Chef Joanne, one of our Menu execs created the really good-looking pork loin that everyone wanted the recipe for:
- pork loin (sliced lengthwise in half)
Marinade:
- rosemary (lots of it)
- oregano
- pepper
- olive oil (just enough to get the brown sugar wet and sticky)
- brown sugar (lots of it!)
- cumin
1) roll pork loin in marinade
2) Bake at 350 for 1 hour.
Also a reminder: For everyone volunteering please remember to bring in any lightly used mittens, scarves and hats that we can hand out to patrons on Thursday next week.
In the top photo three volunteers with the winning yogurt parfaits from the competition and in the bottom photo two volunteers having a time mashing potatoes!
Yummy Lasagna
Here’s the recipe from last night:
Ingredients:
- 6 lbs ground beef
- 3 onions, minced
- 12 jars pasta sauce
- 5 boxes lasagna noodles
- 4 bricks cheese
- 6 containers cottage cheese
1) Sautee ground beef with minced onions.
2) Add sauce to meat.
3) Boil lasagna pasta as per box instructions (some are “oven-ready”)
4) Spread layer of sauce on bottom (start with sauce, not noodles!!)
5) Lay noodles on top and add cottage cheese.
6) Alternate sauce → noodles → cheese (cottage cheese on inside, cheddar on outside) → sauce.
7) Wrap in aluminium foil.
8) Bake at 400 Fahrenheit for 20 minutes.
9) Remove foil.
10) Bake another 20-30 minutes
Please note this recipe fed the whole soup kitchen so make appropriate changes to the quantities!!!
:D Have a wonderful weekend!
